O.Cyrot



The estate of Olivier Cyrot is established since four generations in Pommard in the heart of Cote de Beaune. Created at the beginning of the Century by Paul-Joseph Cyrot, the Estate-Manager of famous Chateau de Pommard and Clos de Tart, the family estate was developped by his son Andre Cyrot and his grandson Jean-Marc Cyrot. The Domaine is now managed by the grand-grandson of PaulJoseph, Olivier, who is the winemaker. At the present time the Domaine represents about 7 hectares and the production is completed by grapes or wines purchases

Olivier Cyrot cultivates its 7 hectares vineyard with methods respecting the environment. The soils are worked throughout the year and pesticide and weedkiller sprayings· are adapted m accordance with the risk of disease. Severe pruning and debuding are made in order to guarantee an excellent quality production. When necessary, green harvesting is carried out in the youngest vines. Thirming only occurs when weather conditions deteriorate. Conceming enrichment (exclusively organic), a rotation program on 5 years, based on soil analysis, is set up.

Grapes are harvested by hand, destemed then crushed into wood or cement vats. A 4 or 5-day cold fermentation (1 0°C) comes before a 1 0-day alcoholic fennentation. During tllis period, temperature and density are checked twice a day. According to the appellation and the quality of the vintage, more or less pumping over and cap treading are made. Chaptalization, if needed, takes place at the end of fermentation. A 3 to 5-day post fermentative maceration, together with a tasting every moming, decides of the devatting date. Pressing (pneumatic) is very gentle in order not to extract bad tarmins or herbaceous flavours and to get very good quality lees. Then the must settle in vats for 24 hours before filling barrels. Maturing on the lees and malolactic fem1entation occur exclusively in oak casks, with 25 to 40% of new wood depending on the appellation. Wines are then racked and blended. Fining and filtration are not systematic. After resting in vats wines are bottled.
